Soapberries |
back to Berries . . .
Picking Soapberries
Soapberries ripen in mid-summer. Once enough berries are found they are cleaned. They are ready for the pot to be boiled or eaten fresh.
Cooking Soapberries
The berries are cooked in a very big pot the pot is put over the fire until they are ready to eat. You cool the berries and then they may be eaten or stored.
Storing Soapberries
If you are going to store them you must dry them. Once dried the berries are rolled and stored for winter.
Making Indian Ice Cream
These berries may be eaten dried. Another interesting way to eat the dried berries is to first soak them and then beat the berries with sugar until the mixture gets foamy. Of course before European contact sugar was not available so just a little water was added. When it is done it looks like ice cream or whipped cream.
